Easy Sourdough Discard Focaccia Bread

Ingredients

Prepare the Dough for Easy Sourdough Discard Focaccia Bread:

    1. Activate the Yeast: In a small bowl, combine the warm water, sugar (or honey), and instant yeast. Stir to dissolve and let it sit for 5-10 minutes until frothy.

    1. Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour and salt.

    1. Add the Sourdough Discard and Yeast Mixture: Add the sourdough discard to the dry ingredients, followed by the activated yeast mixture. Stir everything together until you form a sticky dough.

    1. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until the dough becomes smooth and elastic. You can also knead in a stand mixer using the dough hook attachment for about 5 minutes.

First Rise:

    1. Let the Dough Rise: Lightly oil a clean bowl and place the dough in it. Cover with a damp cloth or plastic wrap, and let it rise for 1 ½ to 2 hours, or until doubled in size.

    1. Punch Down the Dough: Once the dough has risen, gently punch it down to release the air. Turn it out onto a well-oiled baking sheet.

Shape and Second Rise:

    1. Shape the Focaccia: Using your hands, gently spread the dough out to fit the size of your baking sheet (about 9×13 inches). Use your fingers to create small dimples in the dough.

    1. Add Toppings: Drizzle a little olive oil over the top of the dough. Sprinkle with fresh rosemary (if using), coarse sea salt, and any other toppings you prefer (e.g., olives, garlic, or cherry tomatoes).

    1. Let it Rise Again: Cover the baking sheet with a clean towel or plastic wrap and let the dough rise for another 30-60 minutes, or until puffy.

Bake the Easy Sourdough Discard Focaccia Bread:

    1. Preheat the Oven: While the dough is rising, preheat your oven to 400°F (200°C).

    1. Bake the Focaccia: Once the dough has risen, place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the focaccia is golden brown and sounds hollow when tapped on the bottom.

    1. Cool: Remove the focaccia from the oven and let it cool for a few minutes. Drizzle with extra olive oil if desired.

Cut and Serve:

    1. Slice and Serve: Once the focaccia has cooled slightly, cut it into squares or slices. Serve warm, or let it cool completely before storing.
