Roast Chicken: A Simple, Flavorful Dish for Every Occasion

Ingredients

Scale

Ingredients:

  • 1 whole chicken (about 45 pounds)
  • 3 tablespoons olive oil (or melted ghee for a richer flavor)
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme (or fresh thyme sprigs)
  • 1 teaspoon dried rosemary (or fresh rosemary sprigs)
  • 1 lemon (cut into quarters)
  • 45 garlic cloves (smashed)
  • 1 onion (quartered)
  • 12 tablespoons fresh parsley (optional, for garnish)

Roasting:

  • 1 large roasting pan or baking dish
  • Aluminum foil (optional)

Ingredient Highlights

  • Whole Chicken: Choosing a whole chicken gives you the option to roast it with all the skin intact, which locks in moisture and creates a golden, crispy exterior.
  • Olive Oil or Ghee: Olive oil adds a mild flavor and helps achieve a crispy skin. Ghee, an aromatic clarified butter, provides a rich, buttery taste that complements the herbs and spices.
  • Fresh Herbs: Thyme and rosemary infuse the chicken with an aromatic scent and earthy flavor. Fresh herbs make a noticeable difference but dried herbs are a good substitute if needed.
  • Lemon and Garlic: These two ingredients are often used in roasting to add bright, fresh flavors that balance the richness of the chicken.

Instructions

Step 1: Prepare the Chicken

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature ensures the chicken’s skin crisps up perfectly while keeping the meat juicy.
  2. Prepare the Chicken: Remove the chicken from its packaging and pat it dry with paper towels. The drier the skin, the crispier it will get while roasting.
  3. Season the Chicken: Rub the entire chicken with olive oil (or ghee). Make sure to cover the chicken’s skin evenly, including under the wings and legs.
  4. Add Seasonings: Sprinkle salt, pepper, cumin, paprika, garlic powder, and onion powder generously all over the chicken. Use your hands to rub the seasoning into the skin and underneath, ensuring the entire bird is coated with the spices.
  5. Stuff the Chicken: Stuff the chicken’s cavity with the quartered lemon, smashed garlic cloves, and onion quarters. These ingredients will infuse the chicken from the inside, making it extra flavorful and aromatic.

Step 2: Prepare the Roasting Pan

  1. Roasting Setup: Place the seasoned chicken on a roasting rack in a large roasting pan or on a baking sheet lined with aluminum foil. The rack will help the heat circulate evenly around the chicken for a crispier skin.
  2. Add Aromatics: If you have extra herbs, you can scatter them around the chicken in the pan for added flavor. Fresh rosemary and thyme work well.

Step 3: Roast the Chicken

  1. Roast the Chicken: Transfer the pan to the preheated oven and roast the chicken for about 1 hour to 1 hour and 15 minutes, depending on the size of the bird. As a general rule, roast for 20 minutes per pound. You’ll know the chicken is done when the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  2. Optional Basting: For even crispier skin, you can baste the chicken halfway through cooking with its own juices. However, this is optional, and the chicken will still cook beautifully without it.
  3. Check for Doneness: When the chicken is golden and crispy, and the juices run clear when pierced with a fork, it’s ready to come out of the oven. A meat thermometer is a helpful tool here.

Step 4: Rest the Chicken

  1. Let it Rest: Once the chicken is cooked, remove it from the oven and let it rest for at least 10-15 minutes. This allows the juices to redistribute, ensuring the meat is tender and juicy.

Step 5: Carve and Serve

  1. Carve the Chicken: After resting, use a sharp knife to carve the chicken. Start by removing the drumsticks, then cut along the breastbone to separate the breast meat. Serve the chicken in large chunks or as individual servings.
  2. Garnish and Serve: Garnish the chicken with fresh parsley or additional herbs if desired. Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or a crisp salad.
